And we are off again!

I hope that everyone had a wonderful weekend!!!  I felt icky on Saturday, so my productivity level was low.  Of course, I am paying for it now.  I have so much to do, it just isn't funny.

Mother's Day was wonderful.  Despite a cranky boy child at the movies (even though he wanted to see it), I had a great day.  Planted flowers, movies, pizza.  Bossy got me gardening gloves and tools, and Sassy made me some coupons for hugs, breakfast in bed, and for cleaning her room.  G-man ordered me a crystal for my car, but it hasn't arrived yet.  It was sunny, in the high 70's, and beautiful.  Great day.

Back to the grind this week.  Tons of PTA stuff.  Bills.  Updates.  Finishing getting a few things for the wedding this weekend.  Add in the usual round of stuff, and it makes for a a busy few days.

On a side note....anyone have a good vegetarian recipe that super picky kids will eat?  Our sitter is vegetarian, so I need to make sure I have a dinner for her that I can prepare ahead of time.

I will update numbers tonight, and fill you in on a few things.

  1. Sounds like overall you had a great weekend! :) You'll have to show us the crystal when you get it!! :) What about pizza? That's easy enough to make veggie...so long as she's not vegan anyways...

  2. Glad you had a nice Mother's Day. I often make "cheese quesadillas" for kids aka tortillas filled with cheese popped in a microwave for 30 sec per each, then cut into triangles. You can add some refried beans to it for extra hidden fiber. Serve with any veggies they would eat or a salad.

  3. Glad you had a good weekend. AS far as vegetarian stuff goes, I know Carla mentioned pizza (which was my first choice!), but how about a baked pasta dish? Or just something like spaguetti or alfredo? You can also make cheese empanadas and serve with pizza/tomato sauce and some mixed vegetables. Good luck, let us know what you end up cooking for the baby sitter!
